I do that all the time - the taste is superb and the nuts are indeed more digestable. The enzyme inhibitors get neutralized, and phytic acid is reduced, Phytic acid inhibits the absorption of vital minerals, hence soaking nuts before consuming increases the nutrient absorption. Best soaked at room temp, then stored covered in the fridge.

Leeanne Holland Naturopath @ Naturalee ·Nuts without skins such as macadamias, cashews or brazil nuts don't create as much of the murky water residue, but soaking is still recommended for ease in blending and for nutritional purposes. 20 mins soak max should be sufficient. Those making 'mousse' or other raw food recipes with cashew nuts would find the soaking beneficial.
